Tacos or sloppy joe melts!
Tacos- Break up and fry burgers like you would ground round with salt and pepper. If you have cumin, chili powder and garlic add that as well. Stuuf tacos with meat, tomatoes and spinach. Put cheese and put under broiler to melt if desired.
Sloppy Joes- Fry meat same as above. Mix in some marinara sauce and garlic if you have it. Add diced up fresh tomatoes(and depending on how healthy you want your meal, add some spinach too). Cook until tomatoes are tender. Put on toast or bread top with cheese and pop it under the broiler to melt.

I would probably just have a Boca burger on wheat, make a small salad with the spinach and tomatoes and have fruit for dessert. Or fry the tofu and have a fried tofu and spinach sandwich.
